Juice or Milk for Water

Submitted by: Duncan Hines
Rating: 6 Discussions
Recipe Description
You can substitute juice or milk instead of water in cakes. However, follow these precautionary measures: For juice, you may only use fresh. Canned juices contain methyl silicone that can prevent cakes from rising to their full potential. Fresh juice should be used in ratio with water to avoid a dry, coarse texture. For milk, use the exact amount specified by the recipe.

I suggest using the zest from one large orandw along with the orange juice...it turns out tasting like fresh oranges. You could also add a can of drained mandarin oranges to this if you would like to incorporate actual fruit...it turns out delicious! :D

I use Dole Sliced pineapple with HEAVY SYRUP in place of the water that the DH box calls for. I use ONLY the juice that is in the can. I do not add anymore water to it, as this would dilute the flavor. This comes out well, in my 10" caste iron skillet. I overlay the 9 slices all around my perimeter of the pan, and the tenth slice goes into the center. I buy a bag of small chopped pecans and put this in the batter. I like to make this traditional,
southern style, and I follow the recipe with DH's Pineapple surpreme cake mix and would never use another brand or a scratch recipe. I find that this is better.

If you were thinking of adding pineapple to the batter, just drain a can of crushed pineapple and add to your cake batter...I've done this many times with great success! :D

How will using milk change the taste? Will it be more moist?

I would think it would be a richer taste because of the fat content. Would also add protein. That is good.

My Sister taught me to use milk vs. water years ago. It definitely makes the cake moister. Today I acually didn't have milk - I used heavy cream with a little water. Yummy!!!
