Default Fiery chicken cheeseburgers with texas cole slaw



Sometimes a recipe deserves a re-do......this is one of those times. I found some onion rolls in the freezer the other day that needed used, and remembered how good these chicken burgers are on them. Decision made, this was dinner Sunday night.



We love regular burgers but every once in a while opt for making a chicken or turkey burger. This one is SO good......the jalapeno and hot sauce add a nice kick to the burger and the onion keeps it moist.

The ranch sauce is the perfect compliment to the kicked-up burger-and if you have any sauce left over? It's WONDERFUL on baked potatoes.

If you're tired of regular burgers....give this one a try. It's a mouthful with all the goodies piled on...be sure to have some extra napkins standing by!




FIERY CHICKEN CHEESEBURGERS WITH SOOTHING RANCH SAUCE
(Source: adapted from allrecipes)

SOOTHING RANCH SAUCE:
1/4 c. sour cream
1/4 c. Ranch salad dressing
2 Tbsp. mayonnaise
1 tsp. chopped fresh parsley
1/8 tsp. celery seed

BURGERS:
1 lb. ground chicken breast
1/4 c. minced onion
A generous 1/4 c. dried bread crumbs
1 medium jalapeno, seeded and finely minced
1 egg, lightly beaten
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. black pepper
1/3 c. plus 2 Tbsp. hot pepper sauce, divided
4 onion rolls or the roll of your choice, split and toasted
4 slices provolone cheese OR pepperjack cheese
Lettuce leaves
4-8 tomato slices
4 slices bacon, cooked crisp

For the sauce, stir together sour cream, ranch dressing, mayonnaise, parsley and celery seed until well mixed. Cover; chill until ready to serve.

Combine chicken, onion, bread crumbs, jalapeno, egg, garlic, salt, pepper and 2 Tbsp. hot pepper sauce; mix well. If you find the mixture to be really wet, add a little more bread crumbs

Shape into 4 patties. This is a pretty moist mixture, so it helps when forming them to VERY lightly wet your hands-the chicken doesn't stick to them quite as much. Place on a dish, cover and chill the burgers for at least 2 hours-this helps them stay together.

Place the burgers in a nonstick skillet lightly sprayed with nonstick cooking spray. Brown the burgers on both sides over medium heat; cover the pan and cook the burgers for about 8-10 minutes or until cooked through, flipping the burgers occasionally and basting them with the remaining 1/3 c. hot sauce during the last 2 minutes of cooking time.

Top each burger with 1 slice of cheese, cover pan and cook until the cheese melts, 1-2 minutes.

Serve burgers on buns with cheese, lettuce, tomato, bacon and a heaping tablespoon of the ranch sauce. 4 servings.

I have thought about trying the ground chicken good to know someone who has and liked it. Do you have any other ground chicken ones?

Oh yeah it's got sparks alright......that's why the soothing ranch sauce-so you can put out the fire! We love them though.........

Sure thing Ann.......they're really good. The hot sauce and all the goodies give them a real jolt. We love a regular burger but every so often these are good for a change...
