Default Virginia Reel Apple Cake



When I used to have church meetings here at the house, I was always looking for a dessert to feed quite a few people. Bob would say "How about upside-down apple cake? I'd give him the look...and say there's no such thing. He'd come back with "YES THERE IS-my mother used to make one."

Well, my mother-in-law Bev proved that yes indeed, he was right. She said it was an old Pillsbury recipe and she used to make it and loved it. I have a treasured Pillsbury Bake Off Recipe Collection cookbook with recipes from the first 10 Bake-Offs-sure enough, there was the recipe.

This is one of THE BEST upside-down cakes I've ever had. It has a beautiful, tender crumb and the apple topping is absolutely wonderful.

The recipe states to spread the apple topping in a 13x9x2-inch pan that has been well greased on the bottom. I'm always leery of things sticking to the bottom of pans, so I line the bottom of the baking pan with waxed paper/ I've never lost one slice of apple doing it this way. The other way may work perfectly-I'm just afraid to take the chance.

The cake is nothing fancy-it doesn't have to be.....the taste says it all.



Served warm with a scoop of vanilla ice cream? Oh is it ever good.

I thank "Mom" for giving me the heads up to this one........the only thing I didn't enjoy was telling Bob he's right...hahahaha.....

VIRGINIA REEL APPLE CAKE
(Source: Pillsbury Best 1000 Recipes Bake Off Collection cookbook)


IN A SAUCEPAN, COMBINE:
4 c. apples (4-6), pared, cored and sliced
1 c. granulated sugar
2 Tbsp. butter
1 tsp. ground cinnamon


Cook over low heat until apples are tender.

Line the bottom of a 13x9x2-inch pan with waxed paper or parchment paper.

Pour apple mixture into pan. Set aside.

SIFT TOGETHER:
2 c. sifted all-purpose flour
2 1/2 tsp. baking powder
1 tsp. salt


Set aside.

CREAM:
1/2 c. shortening
1 c. sugar until light and fluffy.


BLEND IN
2 eggs, one at a time, beating well after each addition.


COMBINE:
1 c. milk
1 tsp. vanilla extract


Add alternately to creamed mixture with the dry ingredients, beginning and ending with the dry ingredients.

Pour batter over apples in pan.

Bake @ 350 degrees for 35-40 minutes or until cake tests done. Cool in pan for 5 minutes; invert cake onto serving platter.

Serve warm with whipped cream or ice cream. 12-15 servings.

My,my Carol,you had to give a recipe for apple cake you stole my breath nearly away with this one.. we love anything with apples involed we had on for the holidays...But not like this one will be trying this one for sure soon since we are expecting more snow this wk.Thanks Sweetie(
