PEANUT BUTTER CHIP AND JELLY BARS
(Source: Midwest Living, November/December 2011) 1 1/2 c. all-purpose flour 1/2 c. granulated sugar 3/4 tsp. baking powder 1/2 c. butter or margarine 1 egg, lightly beaten 3/4 c. grape jelly 1 (10 oz.) pkg. peanut butter-flavored chips (1 2/3 c.) Grease a 9x9x2-inch baking pan; set aside. In a large bowl stir together flour, sugar, and baking powder; cut in butter until mixture resembles coarse crumbs. Add egg; mix well. Remove and reserve half of the crumb mixture (about 1 1/2 c.). Press remaining crumb mixture into the bottom of the prepared pan. Spread jelly evenly over the crust. Sprinkle with 1 c. peanut butter chips. Stir together the reserved crumb mixture and the remaining peanut butter chips; sprinkle over over top, pressing lightly. Bake @ 350 degrees for 25-30 minutes or until lightly browned. Cool in pan on a wire rack. Cut into bars. Makes 18 bars.
