Default Mini Doughnut Cupcakes

MINI DOUGHNUT CUPCAKES
(Source: Kids Cake Mix Fun and More cookbook)

1 c. granulated sugar
1 1/2 tsp. ground cinnamon
1 (18.25 oz.) yellow or white cake mix, plus ingredients to prepare mix
1 Tbsp. ground nutmeg

Preheat oven to 350 degrees. Grease and flour 48 mini (1 3/4") muffin pan cups.

Combine sugar and cinnamon in a small bowl; mix well and set aside.

Prepare cake mix according to package directions; stir in nutmeg.

Fill prepared muffin cups 2/3 full. Bake @ 350 degrees for about 12 minutes or until lightly browned and toothpick inserted in center comes out clean.

Remove cakes from pans; immediately roll in cinnamon-sugar mixture until completely coated.

Serve warm or at room temperature. Makes 48.
