Default Banana Cream Coffee Cake

BANANA CREAM COFFEE CAKE
(Source: Unknown)

2 bananas, mashed
1 (18.25 oz.) pkg. yellow cake mix
1 (3.4 oz.) pkg. instant vanilla pudding mix
1/2 c. vegetable oil
4 eggs
1 tsp. vanilla extract
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. chopped pecans
1/3 c. firmly packed brown sugar
Confectioners' sugar
Strawberries and bananas for garnish (optional)

Preheat oven to 300 degrees. In a large bowl, combine the mashed bananas, cake mix, pudding mix, oil, eggs and vanilla. Beat for 8 minutes with mixer at medium speed, scraping bowl occasionally. In a separate bowl, combine the cinnamon, nutmeg, pecans and brown sugar. Pour half the cake mix batter into a well greased and floured Bundt pan. Sprinkle the brown sugar mixture over the batter. Cover with remaining batter. Insert a knife in the batter and swirl the layers in a figure-eight pattern. Bake @ 300 degrees for 1 hour or until cake tests done. Cool in pan for 10 minutes onto a wire rack. Invert cake onto a wire rack and cool completely. Dust with confectioners' sugar; garnish with fresh strawberries and bananas if desired. 12-14 servings.
