Default Rec/Rev/Pics.......Southwest Steak



The grocery store had a great deal on family packs of London Broil a month or so ago so I stocked up the freezer with them. We love this cut of steak. It's a great deal-especially when on sale, it takes to marinating SO well, which we love to do and the leftovers do wonderfully in a stir fry.

I'm always on the lookout for new and different marinades. We love the Asian based ones-especially when planning a stir-fry. However, we do like to vary the flavors of marinades every so often. When I saw this one that I had copied off into one of my handwritten recipe books a while ago, it sounded too good to pass up. The steaks were thawed and ready, the huge salad was made....all I needed to do was stir up the marinade ingredients and let it do its magic on the steak.

I twisted a few ingredients to suit our taste.....since it's called Southwestern Steak, I added cilantro to the mix and used the zest of the lime along with the juice. I also added onion and garlic to the pool-everything's better with that in my book. The original recipe calls for only 30 minutes marinating time.....NO WAY! This marinated for about 7 hours....I wanted that flavor to permeate into the meat.

Is this ever GOOD! It's not overly spicy from the hot sauce, it's got a nice amount of "warmth", not "heat." The onion and garlic married nicely with the Italian dressing and really added another level of flavor.




I've gotta tell ya-Bob wanted to photograph this but it was really tough waiting to sit down and eat dinner......the little piece that we tried during the slicing was enough to make us VERY anxious for our meal. Speaking of slicing, always slice London Broil against the grain to ensure tender slices of meat. We like our steak cooked medium/rare which made this very tender, extremely juicy and delicious.

I served this with a nice big side salad and made some Barbecued Green Beans with some leftover steamed fresh green beans I had waiting in the refrigerator. We both fell in LOVE with this steak.

I know I'll be turning to this recipe again and again. Oh and the leftover steak is going to be enjoyed tonight with possibly some Spanish Rice. Easy peasy dinner again-that's just fine with me!

SOUTHWEST STEAK
(Source: adapted from The Basic Cooking Bible cookbook)

3/4 c. Italian dressing (I use low fat)
1/4 c. minced fresh cilantro
1/3 c. Frank's Red Hot Original Sauce
3 Tbsp. freshly squeezed lime juice
Zest of 1 large lime
1 Tbsp. Worcestershire sauce
2 cloves garlic, finely minced
1/3 c. finely minced onion
2 lb. London Broil, cut 1 1/2" thick (feel free to substitute your steak of choice)

Whisk together the Italian dressing, cilantro, hot sauce, lime juice, lime zest, Worcestershire sauce, garlic and onion until well combined (you can also combine these ingredients in a blender or food processor if you prefer). Reserve 2/3 cup of the marinade for basting.

Place the steaks in a heavy-duty resealable plastic bag; pour marinade over the steaks and seal the bag, making sure to turn the bag a few times to get the steaks coated with the marinade. Place bag in the refrigerator and marinate the steaks for 6-8 hours.

Preheat the grill; lightly oil the grates. Remove the steak from the marinade; discard marinade in bag. Grill steaks over medium heat for about 8 minutes per side for medium-rare or to desired doneness, basting occasionally with the reserved marinade.

Remove steaks from grill to a cutting board; let rest for 5-10 minutes. Slice across grain into thin slices. Serve. 6-8 servings.

Carol,this looks delicious,I like the ingredient,of the hot sauce in it.we haven't had,any good deals,On London Broil yet.When we do,I will make this.

You don't have to wait for London Broil Ann...any steak you enjoy will do. This marinade ROCKS!

We had the leftovers tonight and the steak was even more tender and flavorful.

This one is a winner and then some-hope you think so too if you try it.

I love my steak medium rare. it's perfect. we never go beyond that, the steak loses flavor.

We try not to Cyndy-unless Bob gets.........distracted.........then? He complains for days that he overcooked the steak............he done GOOD last night...........

Carol,never thought,I could use,a different steak,for this marinade.LOL I can't wait to try it.All the ingredients,sound,like they go together,so well.

It's so good Ann-go ahead and use your favorite steak. London broil was such a good deal a few weeks back I stocked up. I love NY Sirloin and short cut of rump and grab that when it's a good price-I wouldn't hesitate to use this marinade on them too.

I think you guys will like it.
