Watermelon Cake
Make a big hit with both kids and adults by using watermelon in a bundt cake. Use miniature chocolate chips to simulate watermelon seeds, if you wish. You can make this cake in a sheet pan, but reduce the baking time accordingly. INGREDIENTS: 1 (2-layer package) white cake mix 1 small package mixed fruit gelatin powder 1-1/3 cups seedless watermelon cut from the center and cubed into 1-inch blocks 3 egg whites 1 Tbsp vegetable oil 1 cup miniature chocolate chips, optional . Frosting: 1/4 cup watermelon juice 1/2 cup butter, at room temperature 2 cups powdered sugar 2 (3-ounce) packages cream cheese, at room temperature 2 to 3 drops red food coloring, optional 1/8 cup miniature chocolate chips, optional PREPARATION: Preheat oven to 350 F. Grease and flour a bundt cake pan (or 9 x 13-inch cake pan). In a medium bowl, whisk together cake mix and gelatin powder until combined. Set aside. In a large bowl, beat watermelon, egg whites, and vegetable oil until smooth. Add dry ingredients, half at a time, and mix until well-blended. Fold in chocolate chips, if using. Pour into prepared pan and bake about 35 minutes until toothpick inserted into the center comes out clean. Cool to room temperature before frosting. For the frosting, blend watermelon juice, butter, powdered sugar, and cream cheese until combined and fluffy. Add food coloring to achieve a rosy watermelon color. Frost cooled cake. Place chocolate chips sporadically around the cake to simulate seeds. Refrigerate to set frosting. Remove from refrigerator at least 30 minutes before serving. Yield: about 12 servings |

GREAT recipe Cheryl! Could have used this last week when I was looking to use the watermelon I kept insisting my husband take in his lunch! Won't be pushing it on him that way any more-this looks fantastic! Thanks so much!

sounds awesome! i think i'll try to make it this weekend
i wanna share my favorite recipe too: Banana Cookies you'll need: 1/2 cup of unsalted butter, room temperature 1 cup of sugar 1 egg, room temperature 1 cup of mashed bananas (about 2 ½ large bananas) 1 teaspoon of baking soda 2 cups of flour pinch of salt 1/2 teaspoon of ground cinnamon 1/2 teaspoon of ground mace or nutmeg 1/2 teaspoon of ground cloves 1 cup of pecans (walnuts and chocolate chips are fine alternatives) 1st Preheat the oven to 350°F. Cream the butter and sugar together until light and fluffy. Add the egg and continue to beat until the mixture is light and fluffy. 2nd In a bowl, mix the mashed bananas and baking soda. Let sit for 2 minutes. The baking soda will react with the acid in the bananas which in turn will give the cookies their lift and rise. 3rd Mix the banana mixture into the butter mixture. Mix together the flour, salt, and spices and sift into the butter and banana mixture and mix until just combined. 4th Fold into the batter the pecans or chocolate chips if using. Drop in dollops onto parchment paper-lined baking sheet. Bake for 11-13 minutes or until nicely golden brown. Let cool on wire racks. Makes about 30 cookies. Hope you like it ![]() my site: playscrabble.net |
