Just saw this on her show....and boy does it look good AND easy! I know some of you are thinking SOUP???? when it's so hot where you're at...but sorry y'all, I couldn't resist! (I wrote it down as she was doing it-so bear with me.) Save it for later when the weather gets cooler-she calls it a one pot wonder and suggests serving it with the Parmesan Sticks posted on this forum a few days ago...
PAULA DEEN'S ITALIAN VEGETABLE SOUP 2 Tbsp. olive oil 4 boneless skinless chicken breast halves, cubed Cook chicken in olive oil until lightly browned. Add: 2-3 carrots, sliced thin 1 onion, chopped fine 1 medium zucchini, cut in half lengthwise, then sliced into half-moon slices 2 (14 1/2 oz. each) cans diced tomatoes with basil, garlic and oregano, undrained 3 1/2 c. chicken broth Salt and pepper to taste Cook all together until vegetables are done. Serve sprinkled with grated Parmesan cheese. |

This does sound like very good soup for the cooler months, are you sure you serve it with sprinkled parmesean cheese?? Sorry couldn't resist cookie since you typed that in tice, forgive me??? I must have missed the bread sticks but I will look them up. thanks for sharing.

Thanks Ella-I got SO excited about the recipe-I guess I stuttered......I fixed it though!!!!!! YUP-serve it with grated Parmesan cheese!!!!!! Talk about trying to make a point huh??????

THIS SOUP SOUNDS SO GOOD. WELL HAVE TO MAKE IN THE COOLER MONTHS AHEAD. GOING TO COPY THIS NOW SO I DON'T HAVE TO LOOK FOR IT LATER.
