Default Paula Deen's Fruit Soup

This looked SO good-and easy too!!!

PAULA DEEN'S FRUIT SOUP

Combine in a large saucepan:
1 c. diced fresh pineapple
1 c. diced fresh peaches
1 c. peeled, diced Granny Smith apples
2 c. diced fresh strawberries
1/4 c. sugar
2 Tbsp. honey
2 c. water
1/4 c. lemon juice
1/4 c. pineapple juice
1/4 c. orange juice
1/2 cantaloupe (split cantaloupe through the center-use a melon baller to scoop out the cantaloupe and add the melon balls to the pan of fruit. Leave enough to keep the shell intact-this is what you'll serve your soup in. Slice a thin slice off of the stem end so the cantaloupe half will stand upright on your plate).

Cook fruit/water mixture until fruit is soft-about 15 minutes. Cool thoroughly. Place fruit and cooking juices in the blender; puree until smooth. Chill until ice cold. (To speed chilling-put the pureed mixture in the freezer) Serve in hollowed out melon half topped with a dollop of sour cream and fresh grated orange zest if desired.

now this kind of soup I could eat right now!! I would love to have a good fruit dish so I may pick up what I need on thursday to make this. Thanks Cookie.

Ella-this looked SO refreshing when she poured it in that melon half-the one on the show website didn't match though and I wanted it the way she made it on the show...that's why I was taking shorthand when she was doing it-it's a wonder I can even read what I wrote!!!!

I can only imagine, the only thing I haven't figured out is the standing the cantaloupe on it's end. If the cantoloupe is standing upright how is the fruit going to stay in??

OK Ella....let's see if I can explain how she did it....you're gonna cut the cantaloupe in half through the middle, so you're not gonna be cutting through the stem end, you'll be cutting right across the fat part of the center. BUT-before you cut it in half.....lay it so the stem ends are facing out and slice a little slice off one of the ends of the cantaloupe, either the blossom end or the stem end. That way, when you cut it through the middle, you'll take the seeds out, scoop out the flesh and the shell will sort of make a bowl......does any of that make sense? OR you could forego fooling with making a cantaloupe bowl-take the flesh out of half of it, proceed with the soup and put it in a pretty bowl....ooohhh-how about a pretty dessert dish with a stem? Would look really la-dee-da!!!!

I understand cookie. I was thinking slice ii in the middle like I do if I am slicing to eat. Duh, You know me I have to be drwn a picture with everything. I am beginning to be so embarrassed because it just seems lately I can't figure anything out. Thanks for the clear picture as soon as you siad how to cut it I had the picture right away and felt like a big dumbo.

Ella.......you're not a big dumbo........I was worried I wouldn't explain it clear enough cause I was writing the ingredients and directions down so fast......try reading my version of shorthand....NOT good! Anyway-once I had time to think about what I was saying, then I could explain it better, so I'm glad you asked!
