Default Special Pork Tenderloin

SPECIAL PORK TENDERLOIN

1/3 c. all-purpose flour
1/2 tsp. salt, optional
1/2 tsp. pepper
2 pork tenderloins (1 pound each)
2 Tbsp. butter or margarine
1 c. chopped onion
1 garlic clove, minced
2 c. unsweetened applesauce
1/4 c. packed brown sugar
1/4 c. soy sauce (I always use lite soy sauce)
1/4 c. apple juice
1/2 tsp. ground ginger

In a shallow bowl, combine flour, salt (if desired) and pepper. Cut each tenderloin into 6 pieces; flatten to about 1" thickness. Melt butter in a large skillet. Dip pork into flour mixture; add to skillet and brown on both sides. Place in an ungreased 11x7" baking pan. In the same skillet, saute onion and garlic until tender. Add remaining ingredients; bring to a boil. Pour over pork. Cover and bake @ 350 degrees for 1 hour or until juices run clear and a meat thermometer reads 160 degrees.
