Welcome, I'm Gigi from Louisiana so happy you join with us here on DH....
May be this infromation will helpn you find the cookbook from the chruch or may be some one there will have the recipe.

This is one of the oldness Church In Cornwal,VT call and see if it is them.... good luck Sweetie and if you find it please let me know if this help you out. if you find the recipe please post it for us....

Hi again chick123...I am so stumped by this recipe but will keep searching. Sure sounds good...anything with many tomatoes has to be good. Enjoy your days!

Hi chick123... This is prob'ly not what you're looking for but thought I'd mention the "roll mops", where you pound round steak pieces till they're REALLY dead, make a stuffing of your choice (tomatoes, crumbs, veggies). Place some stuffing in each piece of pounded meat (maybe about the size of a playing card). Roll each up, secure each with 1 or 2 toothpicks. Brown all sides. Remove from pan. Add crushed tomatoes, liquid of choice (beer, wine, etc) to pan. Cook & let moisture evaporate, place rolls back in pan, cover pan, simmer gently till meat is tender, at a low heat.
It's not meatloaf but the rolls are stuffed & a lot of tomatoes are involved. (Love those things!)

Anyway, I'll keep looking for what you really want. Does your husband have any other memories? Maybe cheese or ????

I sure hope you get some positive results when you contact the church, Brenda-with any luck-they'll have the cookbook at the church and you'll get the recipe. How great would that be?

I have cookbooks from MA, NH, CT, ME.........and only ONE from VT! Canaan-and that recipe wasn't in it........but I'm still looking!
