A refreshing cake with pineapple, perfect for toting to summer picnics.
- 1 box Duncan Hines Classic yellow cake mix (plus ingredients to make cake)
- 1 cup brown sugar
- 1 large can pineapple
- 2 small (4 serving-size each) boxes instant vanilla pudding
- 3 cups milk
- 1 large container whipped topping, thawed
- 1 cup shredded coconut (optional)
- Bake cake as directed on box in a 9"x13" pan. Cool for 30 minutes.
- Bring to a boil in a small saucepan the brown sugar and pineapple.
- Poke holes in cake with fork; pour brown sugar mixture over cake.
- Mix pudding and milk; when pudding sets, spread over cake.
- Top with whipped topping and coconut (if using).
- You can substitute chopped nuts in place of coconut.

I have a very large family, 6 kids a full time husband and a elderly parent that lives with us and so we have a large variety of tastes and preferences so when i made this cake I did not expect the whole family to enjoy it so much that i found myself having to make 2 cakes at a time.... Bravo!!! keep recieps like this coming, you make my work so much easier!
