- 1 stick margarine
- 1/2 cup vegetable shortening
- 2 cups sugar
- 5 eggs
- 2 cup flour
- 1 teaspoon soda
- 1 cup buttermilk
- 1 teaspoon vanilla
- 1 small can flaked coconut
- 1 cup chopped nuts
- 2 sticks margarine (for frosting)
- 1 cup chopped pecans
- 32 ounces powered sugar( for frosting)
- 2 (8-ounce) packages cream cheese
- 2 teaspoons vanilla (for frosting)
- Preheat oven to 350.
- Cream margarine, vegetable shortening, and sugar until smooth.
- Add eggs one at a time; beat well after each addition.
- Combine flour and soda and add to creamed mixture.
- Add buttermilk and vanilla; stir in nuts and coconut.
- Pour into 3 floured and greased 8-inch pans.
- Bake at 350 for 25 minutes. Cool completely.
For frosting:
- Cream together margarine and cream cheese.
- Add 32 ounces powdered sugar and the vanilla. Mix well.

Made this cake last night....WOW!! It is delicious!! Worth every ounce of effort I put into it. Brought it to work for a co-workers birthday, everyone wants the recipe!!!
