Ingredients Baking Instructions
  • 1 stick margarine
  • 1/2 cup vegetable shortening
  • 2 cups sugar
  • 5 eggs
  • 2 cup flour
  • 1 teaspoon soda
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 small can flaked coconut
  • 1 cup chopped nuts
  • 2 sticks margarine (for frosting)
  • 1 cup chopped pecans
  • 32 ounces powered sugar( for frosting)
  • 2 (8-ounce) packages cream cheese
  • 2 teaspoons vanilla (for frosting)
  1. Preheat oven to 350.
  2. Cream margarine, vegetable shortening, and sugar until smooth.
  3. Add eggs one at a time; beat well after each addition.
  4. Combine flour and soda and add to creamed mixture.
  5. Add buttermilk and vanilla; stir in nuts and coconut.
  6. Pour into 3 floured and greased 8-inch pans.
  7. Bake at 350 for 25 minutes. Cool completely.
  8. For frosting:

  9. Cream together margarine and cream cheese.
  10. Add 32 ounces powdered sugar and the vanilla. Mix well.

Made this cake last night....WOW!! It is delicious!! Worth every ounce of effort I put into it. Brought it to work for a co-workers birthday, everyone wants the recipe!!!
