Recipe Description
A tasty mint-chocolate cakepop, coated with bright green vanilla candy coating and topped with a mini creme-filled sandwich cookie.

Ingredients Baking Instructions
  • 1 Duncan Hines French Vanilla Cake Mix
  • 1 Cup water
  • 1/3 Cup oil
  • 3 large eggs
  • 1 packet of Duncan Hines® Frosting Creations™ Mint Chocolate Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
  • 24 oz. mini creme-filled sandwich cookies (crush 7oz., use the rest for toppings)
  • 45 cakepop sticks
  • Vanilla candy coating/wafers
  • Green candy coating/wafers (or mint chips)
  1. Preheat oven to 350°F.
  2. Grease sides and bottom of a 13x9” pan, flour lightly.
  3. Blend cake mix, water, oil, & eggs in a large bowl for 30 seconds at low speed.
  4. Beat batter for 2 minutes at medium speed, scraping the sides of the bowl often.
  5. Pour batter in pan and place in oven.
  6. Bake for 25 minutes.
  7. Remove cake from oven and allow to cool in pan for 10 minutes.
  8. Pour pack of Duncan Hines® Frosting Creations™ Mint Chocolate Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  9. Crush 5-7 oz. of mini sandwich cookies.
  10. Mix crumbled warm cake, can of frosting, and crushed sandwich cookies until they create a soft, moldable dough. Refrigerate dough for 1-3 hours to make rolling & dipping easier.
  11. Using a cookie scoop, measure and roll the cakepop dough into balls.
  12. Melt vanilla candy wafers, adding enough green wafers to achieve the shade of green you want.
  13. Dip cakepop sticks into melted vanilla candy coating and press ¾ into the cake balls. Allow to set in fridge.
  14. When coating is set, begin dipping pops in the candy coating and immediately top with a mini sandwich cookie.
