Easy lemon cookies made from a cake mix.
- 1 pkg. Duncan Hines Lemon Supreme cake mix
- 1/3 cup vegetable oil
- 2 eggs
- 1 tbsp. lemon juice
- 1 cup powdered sugar
- 2 tbsp. lemon juice
- 1 tsp. lemon zest
- Mix cake mix, oil, eggs, and 1 tablespoon lemon juice together. Dough will be very stiff.
- Drop dough on ungreased cookie sheet.
- Bake at 350 degrees F for 12-14 minutes.
- While cookies are baking, make glaze: mix powdered sugar, 2 tablespoons lemon juice, and lemon zest together in small bowl.
- Let cookies cool for 1 minute, then top with glaze.

The fastest cookies I've ever made and sooooo good. I just used a spoonful of lemon frosting on them while they were still hot and then put them into the freezer for 10 minutes to cool. They're like bite-sized cakes. Mmmmmm....

I just made these cookies. My batter was thick but not stiff so I added coconut, bake then for 15minutes and put on glaze. they were wonderful. Maybe my eggs were too large as I measured everything exactly. I used to bake all the time but my health has not allowed me to do this. I was thrilled to learn I can make cookies from the cake mixes. Really cuts out all the time & the results are great.

I bought a cookie dough that was lemon with M&M's in it, I am going to try these this way, I also have chocolate covered blueberries I thought I would put in 1/2 the cookies.

I've made these cookies several time, but I don't use the glaze. I form the cookies into balls and roll them in powdered sugar and bake - Scrumptious!!

I made these again, this time substituting a coconut cake mix and made a simple chocolate glaze for the top, they taste like mounds candy bar and are super good!

I just made these this evening and they were terrific. I added a small choclate drizzle after the glaze. It added color and a little taste. Yummy either way.

I just made these cookies today and they are simply delicious.The glaze has a sweet and tart taste just a wonderful addition to this lemon cookie.I was able to make two dozen with this recipe.You must try them sooo good.Thanks
