These yummy sandwich cookies get their filling from a twist on Duncan Hines Flavor Creations Cherry Vanilla Frosting Mix and Frosting Starter, and tastes like a cherry cordial or other delicious cherry candy!
(NOTE: I have cut the cookies in half to show the filling, but they look a little messy because these cookies are made for eating, not so much for slicing. Don't let the photo scare you off!)
- 1 packet of Duncan Hines® Frosting Creations™ Cherry Vanilla Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
- Maraschino Cherries, cut into small pieces (a small jar is enough)
- 1 Cup Butter, softened
- 1/2 Cup packed brown sugar
- 1/2 Cup sugar
- 1 egg
- 1 tsp vanilla
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/8 tsp salt
- 3 cup flour, plus more for flouring surface
- 1 package chocolate coating (such as almond bark)
- Cream butter and sugars together in a large bowl.
- Add beaten egg, vanilla, baking powder, cinnamon, and salt. Mix well.
- Add flour 1 cup at a time. It will get thick- I had to mix the last cup in with my hands.
- Roll into 1/8-1/4 inch thickness, and cut with a 2 1/2" or 3" round cookie cutter.
- Bake at 400 for 5-7 minutes on greased cookie sheet.
- While baking, pour pack of Duncan Hines® Frosting Creations™ Cherry Vanilla Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
- Add chopped cherries and continue to stir until well-mixed (use enough cherries that there are some in every bite! I used about 20 cherries)
- When cookies are completely cooled, frost the bottom of a cookie, and top it with another cookie.
- Repeat for remaining cookies so all of them form sandwiches.
- Freeze for 1-2 hours.
- Melt chocolate in double boiler or microwave. Remove cookies from freezer, cover in melted chocolate, and set aside until hardened. Serve.
