Cinnamon Oatmeal Whoopie Pies

Recipe Description
A whoopie pie is the ice cream sandwich of of the cookie world. Two moist oatmeal cookies surround Duncan Hines deliciously sweet cinnamon bun icing for an easy to make treat.

Ingredients Baking Instructions
  • 1 packet of Duncan Hines® Frosting Creations™ Cinnamon Roll Flavor Mix and 1 can of Frosting Creations™ Frosting Starter

Oatmeal cookie recipe:

  • • 2 eggs, beaten
  • • 3/4 teaspoon vanilla extract
  • • 2/3 cup butter, softened
  • • 2/3 cup brown sugar
  • • 2/3 cup white sugar
  • • 1-2/3 cups all-purpose flour
  • • 3/4 teaspoon salt
  • • 3/4 teaspoon ground cinnamon
  • • 1-1/4 teaspoons baking soda
  • • 1-1/3 cups rolled oats
  1. Set oven on 350 degrees F.
  2. Cream together the butter, brown sugar, and white sugar.
  3. In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed.
  4. Next, stir in the beaten eggs and vanilla, then stir in the rolled oats last.
  5. Dough will be stiff. Drop by teaspoonfuls onto a greased cookie sheet.
  6. Add chocolate chips, nuts, or raisins for an exciting twist.
  7. Bake for 10-12 minutes.
  8. Pour pack of Duncan Hines® Frosting Creations™ Cinnamon Roll Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
  9. When cooled, apply Duncan Hine’s Cinnamon Roll Frosting to the bottom of one cookie, liberally.
  10. Then stack a cookie matching in size to sandwich the frosting between the two cookies.
  11. For another twist, dip the exposed sandwich edges of frosting in brown sugar, mini chocolate chips, or cinnamon sugar.
