A whoopie pie is the ice cream sandwich of of the cookie world. Two moist oatmeal cookies surround Duncan Hines deliciously sweet cinnamon bun icing for an easy to make treat.
- 1 packet of Duncan Hines® Frosting Creations™ Cinnamon Roll Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
Oatmeal cookie recipe:
- • 2 eggs, beaten
- • 3/4 teaspoon vanilla extract
- • 2/3 cup butter, softened
- • 2/3 cup brown sugar
- • 2/3 cup white sugar
- • 1-2/3 cups all-purpose flour
- • 3/4 teaspoon salt
- • 3/4 teaspoon ground cinnamon
- • 1-1/4 teaspoons baking soda
- • 1-1/3 cups rolled oats
- Set oven on 350 degrees F.
- Cream together the butter, brown sugar, and white sugar.
- In a separate bowl, combine the flour, salt, cinnamon and baking soda; add to the creamed mixture and stir until all of the dry ingredients are absorbed.
- Next, stir in the beaten eggs and vanilla, then stir in the rolled oats last.
- Dough will be stiff. Drop by teaspoonfuls onto a greased cookie sheet.
- Add chocolate chips, nuts, or raisins for an exciting twist.
- Bake for 10-12 minutes.
- Pour pack of Duncan Hines® Frosting Creations™ Cinnamon Roll Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
- When cooled, apply Duncan Hine’s Cinnamon Roll Frosting to the bottom of one cookie, liberally.
- Then stack a cookie matching in size to sandwich the frosting between the two cookies.
- For another twist, dip the exposed sandwich edges of frosting in brown sugar, mini chocolate chips, or cinnamon sugar.
