Cherry Chocolate Almond Cupcakes

These delightful and adorable cupcakes are sure to brighten up anyone day and are so fun to make! They even have a sweet surprise in the middle!

Ingredients Baking Instructions
  • 1 packet of Duncan Hines® Frosting Creations™ Chocolate Almond Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
  • 1 box of Duncan Hines yellow cake mix + the ingredients it says to use on the box
  • 1 cup mini chocolate chips
  • 1 can of cherry pie filling
  • 1/2 container (4 oz) chocolate flavored cream cheese
  • 1 jar maraschino cherries, drained and set on paper towels
  • 1/2 stick of butter (4 tablespoons)
  • toasted almond pieces for garnish, optional
  1. Preheat oven to 350.
  2. Line cupcake pan with cupcake liners.
  3. Make cake mix according to box recipe and fold in mini chocolate chips.
  4. Fill cupcake liner 1/4 of the way full with batter.
  5. Place 1 cherry and a bit of the filling from the can of cherry pie filling onto cupcakes.
  6. Cover cupcakes and cherries with remaining batter being careful not to overfill.
  7. Bake in a 350 degree oven for 18-20 mins, or until cooked through.
  8. Continue making cupcakes until all the batter has been used.
  9. Cool cupcakes completely.
  10. To make the first frosting, place butter in the mixer and beat until creamed.
  11. Add 1/4 of the can of Duncan Hines frosting starter and remaining cherry pie filling.
  12. Mix until smooth then chill for at least 2 hours.
  13. To make the second frosting, place the Duncan Hines chocolate almond pack, remaining Duncan Hines frosting starter, and 4oz of chocolate cream cheese into a bowl and beat until combined.
  14. Chill second frosting for at least 2 hours.
  15. When ready to frost cupcakes, place one spoonful of cherry frosting onto the middle of each cupcake.
  16. Pipe chocolate almond frosting around the cherry frosting.
  17. Place a maraschino cherry onto the middle of each cupcake.
  18. Garnish with toasted almond pieces if desired.
