These delightful and adorable cupcakes are sure to brighten up anyone day and are so fun to make! They even have a sweet surprise in the middle!
- 1 packet of Duncan Hines® Frosting Creations™ Chocolate Almond Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
- 1 box of Duncan Hines yellow cake mix + the ingredients it says to use on the box
- 1 cup mini chocolate chips
- 1 can of cherry pie filling
- 1/2 container (4 oz) chocolate flavored cream cheese
- 1 jar maraschino cherries, drained and set on paper towels
- 1/2 stick of butter (4 tablespoons)
- toasted almond pieces for garnish, optional
- Preheat oven to 350.
- Line cupcake pan with cupcake liners.
- Make cake mix according to box recipe and fold in mini chocolate chips.
- Fill cupcake liner 1/4 of the way full with batter.
- Place 1 cherry and a bit of the filling from the can of cherry pie filling onto cupcakes.
- Cover cupcakes and cherries with remaining batter being careful not to overfill.
- Bake in a 350 degree oven for 18-20 mins, or until cooked through.
- Continue making cupcakes until all the batter has been used.
- Cool cupcakes completely.
- To make the first frosting, place butter in the mixer and beat until creamed.
- Add 1/4 of the can of Duncan Hines frosting starter and remaining cherry pie filling.
- Mix until smooth then chill for at least 2 hours.
- To make the second frosting, place the Duncan Hines chocolate almond pack, remaining Duncan Hines frosting starter, and 4oz of chocolate cream cheese into a bowl and beat until combined.
- Chill second frosting for at least 2 hours.
- When ready to frost cupcakes, place one spoonful of cherry frosting onto the middle of each cupcake.
- Pipe chocolate almond frosting around the cherry frosting.
- Place a maraschino cherry onto the middle of each cupcake.
- Garnish with toasted almond pieces if desired.
