Creamy Red Velvet Cupcakes

Absolutely tantalizing! Duncan Hines Red Velvet Cake Mix, cream cheese, chocolate chips and coconut make these Creamy Red Velvet Cupcakes rich with flavor.

Ingredients Baking Instructions
  1. Preheat oven to 350°F. Grease muffin pans or line with paper baking cups.
  2. Prepare batter according to package directions.
  3. Spoon batter into lined muffin cups. In small bowl, combine cream cheese, sugar and egg; mix until smooth. Stir in chocolate chips and coconut.
  4. Spoon about 1 tablespoon cream cheese mixture onto batter of each cupcake.
  5. Bake 25 minutes or until toothpick inserted in center comes out clean. Cool cupcakes following package directions. Spread cupcakes with frosting.

This is an easy and delicous recipe...Made these for a valentine party last year and this year I made 144 for two of my other buildings. orders for more next year already in the process. I didn't change anything about the recipe. Even people that are not big cocanut fans loved them.

I made these, using the suggestion of adding in pudding mix. The pudding mix does add extra flavor and makes the cupcakes super moist... but it makes the batter WAY too thick for the filling to sink down. The first batch looked terrible, so I swirled the 2nd batch around, and it turned out quite pretty! I omitted the coconut all together. I will use this recipe again, but using the swirl method or leaving out the pudding.

Has anyone tried doing what asjw suggested with regards to adding a tsp of cocoa powder and a tsp of instant coffee?

I have made theses several times. They are always a huge hit with friends and coworkers. I don't really like tub frosting, so I make cream cheese frosting and fold in some whipped cream. They are awesome every time!!

I made these for a friends bday...they were AMAZING! I left the coconut out, however, and they were still a huge hit with everyone!

These came out well but because they are a box brand is there a way to bring out the Red Velvet flavor?

Red velvet cake from scratch is nothing more than a milk chocolate cake with a ton of red food coloring. What Red Velvet flavor are you talking about???

This is one of my fav cake mix. I add a pack of jello's chocolate instant pie filling to the mix after i've mixed thhe box ingredents and ig just adds a flavor and texture that you'll love. Try it!! And tell me how you liked it :)

I did it over the summer - corked a hole in the center of the cupcake after they have cooled, spooned in a tsp of the filling, frosted and then chilled it and it was really good. Friends where pleasantly surprised when they bit into it.

Love this recipe!! These are wonderful! I did not put the coconut in either and made a homemade cream cheese frosting from a recipe also on this website.

Please confirm: does the creamcheese, choc chips & coconut get baked as well? That doesn't seem right to me..

Yes the cream cheese mixture is dropped right into the center of the batter for each cupcake and then baked. They are wonderful!

So is the mini chocolate chips, cream cheese, powder sugar and egg get mixed all together, then once you pour the red velvet mix it goes on top to bake?

Yes that is correct. Once they bake, the cream cheese mixture will be in the center of the cupcake and you will not see it.

I made these cupcakes for a work event and everyone loved them! I skipped the coconut and made a homemade cream cheese frosting. They are so simple, but taste like they took tons of effort.

Iam trying a butter cake recipe, with 1/4 cup of suga and crm chz frosting in the mixture. I poured it into a bunt cake pan and popped it into the oven. LOL prayer for me, I hope it comes out right!!!
