Shirley Temple (or Roy Rogers, for the boys...) Cupcakes. I used the Cherry-Vanilla Frosting Creations on a 7-up/Grenadine layered Cupcake; garnished with a maraschino cherry.
- 1 packet of Duncan Hines® Frosting Creations™ Cherry Vanilla Flavor Mix and 1 can of Frosting Creations™ Frosting Starter
- 1 1/2 sticks unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 ½ cups all-purpose flour + 1 TBSP
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup 7-up, room temperature
- ¼ tsp lemon zest
- ¼ tsp lime zest
- 1 TBSP grenadine (preferred) or maraschino cherry juice
- red food coloring
- maraschino cherries, drained and patted dry, for garnish
- Pour pack of Duncan Hines® Frosting Creations™ Cherry Vanilla Flavor Mix into can of Duncan Hines® Frosting Creations™ Frosting Starter. Stir until evenly blended.
- Cream together the butter and sugar on medium speed until light and fluffy, 3-5 minutes.
- Add the eggs, one at a time. Beat well.
- Add the vanilla extract. Mix well.
- In separate bowl mix together the 1 ½ cups of flour, baking powder, and salt.
- Add portions of the dry ingredients to the creamed mixture, alternating with portions of the 7-up. Mix until well combined. Batter may look slightly curdled – this is okay.
- Take ½ cup of the batter and put in a small bowl. Add the remaining 1 TBSP of flour, the grenadine, and enough food coloring to turn the batter red. Mix well. Spoon one large teaspoon of this batter into each baking cup – spread out to cover bottom of baking cup.
- To the remaining white batter add the lemon and lime zest and mix well. Gently spoon this batter on top of the red batter; trying not to mix the two colors together. Fill baking cups 2/3 full.
- Bake 16 - 19 minutes at 350 degrees or until a toothpick inserted in the center comes out clean. Let cool completely in pan.
- Frost cooled cupcakes with Duncan Hines Cherry Vanilla Frosting Creations and garnish with one maraschino cherry.

These are really good. Dense but not dry. I used a different butter cream frosting. Will make again!
