Recipe Description
A Lemon cake with a shot of Patron and Grand Mariner. Then topped off with a delicious Whipped Cream Cheese Frosting and sprinkled with some colored salt and a lime Wedge. The perfect Margarita.

Ingredients Baking Instructions

Cupcakes:

  • 1 box of Lemon cake
  • 1 package of vanilla pudding mix
  • 4 eggs
  • 1/2 Cup Vegetable Oil
  • 2/3 Cup Water
  • 1/4 Cup Lime Juice
  • 1/4 Cup Tequila
  • 2 Tablespoon Grand Mariner

Glaze:

  • 1 cup confectioners' sugar
  • 1 tablespoon tequila
  • 2 tablespoon grand mariner
  • 2 tablespoon lime juice

Whipped Cream Cheese Frosting:

  • 1 package cream cheese
  • 1 Cup white sugar
  • 1/8 tsp salt
  • 1 tsp vanilla extract
  • 1 1/2 cups heavy whipping cream
  1. Preheat oven to 350 degrees.
  2. Combine cake mix, pudding mix, eggs, oil, water, lime juice and grand mariner. Beat for 2 minutes
  3. Pour batter into Cupcake pan and back for 30 minutes or until toothpick inserted comes out clean.
  4. While cupcakes are cooling mix glaze ingredients and spoon over the cupcakes. Let Cupcakes cool completely.
  5. Frosting:

  6. Beat Whipping Cream until stiff peaks form, set aside.
  7. In large bowl combine cream cheese, sugar, salt and vanilla. Beat until smooth then fold in Whipped Cream.

Sounds AWESOME! I love making alcohol infused cupcakes...it seems to make everyone happy, LOL!

Do you know if it has to be instant pudding mix or can cook & serve work??

These are so yummy but my frosting didnt turn out too well it was too runny it could have been the whipping cream was not whippped enough but I am not sure either way it was delicious.. well most diff make again.
