Caramel Icing

Ingredients Baking Instructions
  • 3 cups sugar
  • 2 1/2 sticks butter
  • 3 tablespoons white corn syrup
  • 3/4 teaspoons baking soda
  • 1 teaspoon vanilla
  1. Mix together all ingredients in saucepan, except vanilla, and start heat on low temperature.
  2. Cook until it reaches soft-ball stage. Take off heat.
  3. Add vanilla. Whip with electric mixer until consistency to spread.
  4. Place pan in container of hot water while icing cake to keep the icing from getting too stiff.

can someone help me? my microwave isn't working and I need to use the chocolate Amazing Glaze which instructs you to warm it in microwave. Can i warm it in hot water? the oven? Thanks.

Stores in my area don't sell caramel icing by DH anymore. Say it has been discontinued???? Is that true?

The carmel icing does not have enough instructions. The softball stage is not satisfactory. How long does this have to cook to carmelize the sugar. I cooked it well over the 10 minutes and it has not disolved the sugar as of yet. That is a lot time and money put into an icing to not be able to use.

This is a fairly standard cooked frosting recipe, but I don't see the step where the sugar is cooked to make it caramel. It would probably taste all right as presented, but it's not caramel.

Hi, I am Matlock,
Call your local grocer and ask if they carry Argo corn starch. I use this for making gravy also.
