Banana Coffee Cake

Recipe Description
Your favorite Duncan Hines Banana Supreme Cake Mix in a coffecake form has a ribbon of sugary pecan streusel rippling through it. Banana Coffecake is a delicious idea for your Sunday brunch.

Ingredients Baking Instructions

Streusel:

  • 1/2 cup chopped pecans
  • 1/3 cup firmly packed brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg

Cake:

  1. Preheat oven to 350 °F. Grease and flour 10-inch Bundt® pan or tube pan.
  2. For streusel, combine pecans, brown sugar, cinnamon and nutmeg in small bowl. Stir until blended. Set aside.
  3. For cake, combine cake mix, pudding mix, eggs, bananas, oil and water in large bowl. Beat at medium speed with electric mixer for 2 minutes. Pour half of batter into pan. Sprinkle streusel over batter. Spread remaining batter over streusel. Swirl with knife in figure-eight pattern.
  4. Bake at 350 °F for 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool in pan 25 minutes. Invert onto cooling rack. Cool completely. Dust with confectioners' sugar.

DELISH! I used 2 medium sized naners and didn't add the pecans or nutmeg but it was still great. The family loved it.

You can substitute unsweetened apple sauce for the oil. Check Google for the right amount.

just use yellow cake mix and a 2-3 ripe bananas and it will be superb

I roasted the bananas first. The intense banana flavor is amazing! Just roast bananas on a baking sheet at 350 degrees for aprox 20 minutes... until the skins are completely black and they feel squishy to the touch. They will get quite juicy, so just drain them a but before adding to the batter. I do this for banana bread, too. Your whole house will smell like bananas!

Absolutely GREAT!!! My husband loved it so much that he suggested I enter it in the county fair! Took some to my Mother and father-in-law and they loved it also. Very moist and has a great banana flavor. Thank God that I already had a box of the cake mix on hand but wanted to make another one for a family reunion; couldn't find cake mix in the store.

I know in my area it's hard to find too. WalMart does not carry nor does Kroger. I checked a family owned store and they have it. You might look for something like that.

I have trouble finding this also. I live in east Texas and I find it at Brookshires. I have threatened to picket if they stop carrying it. It's my grandsons favorite.

I have found it at Homeland stores. It is not as popular as some of the others so I think some stores just don't carry it. Hope this helps.

BTW, you might also try working with a white cake mix and using banana cream pudding mix instead of vanilla. You could also put a tsp. of banana extract in it to give the banana flavors if you can't find the mix. Just an idea.

what i do is if my local store doesnt carry i order 3 online and i always have a stash then im covered for all of the occasions birthdays or what ever just a thought
