This is a rich and luscious dessert that can go with anything. It can be decorated for any season or holiday.
- 1 Duncan Hines Moist Yellow Cake Mix
- 1 small can crushed pineapples, not drained
- 2 cups sugar
- 1 small container Cool Whip
- 2 small pakages of instant vanilla pudding mix
- In a small sauce pan, combine the pineapple and sugar and bring to a boil.
- Then simmer until sugar is melted. Bake cake according to instructions.
- While cake is warm, pour the pineapple mixture over the top. Let cool.
- Mix the pudding according to package directions. Let thicken and then spread over cake.
- May be topped with chopped nuts or any decorations desired. You can add the pudding before the Cool Whip.

I've made this a lot but use a regular sized can of crushed pineapple and a scant 1 cup of sugar. Poke holes in cake, top with pineapple, top that with pudding, then a layer of whipped topping & sprinkle with toasted coconut. Yummy

I really wish all these recipes would use measurements instead of "small package" and "small can" especially since there are cooks from different countries and the same size packages are not found. At least with proper measurements we could have a much better chance of success with these recipes.

I baked this cake in a 13x9" pan and used only one small package of the instant vanilla pudding mix, which was really enough...but, next time will try using one large 5.1 oz. package. My other plan is to try banana instant pudding mix plus a generous sprinkling of toasted coconut on top of the Cool Whip.

This cake is also really good with crushed heath bars on top of the cool whip, add some maraschino cherries, and it looks just as good as it tastes!

I tried it too, but added toasted coconut over the Cool Whip. Also, poking the cake before laying the pineapple mixture makes it easier for the liquid to soak into the cake, giving it a great texture.
